After the 30-minute ride on the High Roller at The Linq (shown in the background), stroll along the promenade to one of district’s many nearby dining experiences. One is Off The Strip at The Linq, an American chophouse open 23 hours a day that accommodates group bookings and full buyouts for up to 335 diners.
The popularity of celebrity chefs continues to light up the dining scene as famous faces take their toques to the Strip in record numbers. Shown here, Tom Colicchio’s Heritage Steak at The Mirage, delights many a Top Chef fan. Other familiar names include Giada at The Cromwell, the first restaurant by popular television star Giada De Laurentis; Bazaar Meat by Jose Andres at the SLS Hotel & Casino; Mario Batali’s Carnevino at the Palazzo; and a new steakhouse, CUT, from pioneer celebrity chef, Wolfgang Puck.
The Neon Museum showcases the world’s largest collection of neon signage. The museum is home to a collection of more than 150 neon signs dating from the 1930s to the present day and includes iconic signs from the city’s most celebrated properties— Moulin Rouge, the Desert Inn, the Flamingo, and the Stardust—which are displayed alongside those from various other bygone restaurants, hotels, and businesses. Hour-long night tours of the museum’s outdoor Neon Boneyard are conducted daily from 6:30 p.m. to 8:30 p.m. The picturesque tours are led by docents who share stories about the establishment of Las Vegas and the growth of downtown, Fremont Street, and Las Vegas Boulevard. The newest addition to the Boneyard‘s collection is the Riviera Hotel & Casino sign that glowed atop the city’s first high-rise hotel on Las Vegas Boulevard from 1955 until May 4, 2015.
Inspired by a group of extraordinary Irishmen who led lives of great adventure, the Nine Fine Irishmen pub at New York-New York Hotel & Casino was built in Ireland and shipped to Las Vegas. The restaurant’s signature dishes are made of the freshest, natural Irish ingredients that are paired with stouts, ales, lagers, and spirits.
If you like bowling, you’ll love the 72-lanes at Red Rock Casino, Resort and Spa, off the strip. The largest luxury bowling center in Las Vegas, Red Rock Lanes is open until 2:00 a.m. during the week and 24 hours a day on weekends. The fun factor fires up from 6:00 p.m. to 2:00 a.m. on Fridays and Saturdays with Cosmic Bowling, which features dancing lights, fog machines, music, and glow-in-the-dark bowling lanes, pins, and bowling balls. The VIP experience offers 12 lanes that can be used simultaneously or divided into three private suites.
Still a favorite, Aureole at Mandalay Bay was opened by Charlie Palmer in 1999. It features seasonal dishes that include artisan dry-aged beef and fresh seafood. Designed by restaurant designer Adam Tihany, Aureole's visual trademark is a four-story wine tower with its very own Wine Angel Stewards, who gracefully ascend the tower to retrieve bottles. Guests can search the 3,200 bottle wine list via touch screen.
Cirque du Soleil has long embraced the residency entertainment concept and now offers eight, 90-minute shows year round in Las Vegas, each with its own theme, acrobatic style, and unique performance venue. The most popular is the water-themed O at The Bellagio, where seven VIP opera house-style suites offer premium amenities including truffles, cocktail service, and outstanding views of the stage. The Mirage presents The Beatles LOVE, a celebration of the musical legacy, while the sultry Zumanity awaits an adults-only audience at New York-New York Hotel and Casino. High-energy acrobatics define the Cirque classic Mystère at Treasure Island, KÀ offers an adventure concept at MGM Grand, and master magician Criss Angel bewitches with illusions in Believe at Luxor. Rounding out the offerings is the immersive musical experience, Michael Jackson: ONE (pictured) at Mandalay Bay Resort and Casino.
From the global travels of Master Chef Hubert Keller comes a new and unique dining experience, Fleur by Hubert Keller, which offers small plates from around the world featuring intense flavors and exotic presentations in a fun, social environment. Fleur offers casual seating at the bar, lounge, and patio as well as a more intimate experience in the dining room. Parties of up to 30 can be seated in the semi-private cabana area. It's at Mandalay Bay.
In downtown Las Vegas, a historical neoclassical building that once served as the city’s post office and courthouse now houses the Mob Museum. Interactive, multi-sensory exhibits engage visitors with true stories ranging from the birth of organized crime to today’s headlines. The museum offers several group packages and organizes events including retreats, parties, dinners, and team-building events. A full museum buyout accommodating up to 450 encompasses a lobby, courtroom, courtroom waiting room, meeting room, and a corridor that can host 70 for a reception. One late night option is “Sleeping With The Mob,” a customizable evening package that includes appetizers, cocktails, all museum exhibits, a courtroom screening of a Mob movie, and a midnight scavenger hunt.

Topgolf Las Vegas will open at MGM Grand Hotel & Casino in spring 2016 with competitive golfing games for all skill levels using microchip-embedded golf balls that allow shots to be tracked for accuracy and distance. Designed to be the company’s flagship location, the four-level, 105,000-square-foot entertainment complex sits on eight acres. Overlooking a 215-yard outfield will be 102 hitting bays on the first three levels while the fourth level will offer VIP areas with water features and spectacular views of the Strip. Topgolf will have a full service restaurant, bars, and can cater events for groups of 10 to 2,000.
