At the Southampton Princess in Bermuda, the year-and-half-old, hands-on dolphin encounter program is in such demand that during the season (April through mid-November) interested guests have to put their names in a lottery. The lucky ones get to don a life preserver for an incredibly rare experience, interacting up close with these intelligent and beautiful animals. Fortunately for meeting executives willing to pay a premium, groups can buy out all eight spots in an encounter. There are six encounters each day and typically two or three can be reserved exclusively for groups, who sometimes create their own lottery to dole out the coveted spots. Other options for groups that don't involve getting wet include behind-the-scenes tours and a "show" that attendees watch from the beach.
