Don't choose another pillow gift for attendees; let them do the picking. Planners at the IACC annual meeting at the Inverness Conference Resort in Denver left gift certificates (modeled after old mine-stock certificates) in attendees' rooms on opening night. Guests could trade them in for gifts at an Old West trading post set up in an empty meeting room. Not only was the idea a hit, but it cost almost nothing to implement — and everyone went home happy.
